In Yie Ar Kung-Fu, players take on the role of Oolong (or Lee in the MSX and Famicom versions) as they battle against a series of martial arts masters. The number of opponents varies depending on the version, with the arcade edition featuring eleven fighters, while home console versions range from five to thirteen.

Each adversary has a distinct appearance and fighting style. Players can execute up to 16 different attacks using a combination of button inputs and joystick movements while standing, crouching, or jumping. Attacks can be delivered at high, mid, and low levels. Regardless of how they are defeated, male opponents (except for Feedle) fall backward with their legs spread, while female fighters collapse on their sides. Feedle, however, vanishes upon defeat. When an extra life is earned, the phrase "xiè xiè" (Mandarin for "thank you") is played.

Unlike Karate Champ (1984), which relies on a point-based system, Yie Ar Kung-Fu introduces a health bar mechanic. Each fighter has a health meter that depletes with each hit, and once fully drained, the character is knocked out.

In the arcade version, players can continue battling until all lives are lost. However, once the maximum score of 9,999,900 is reached, no additional lives are awarded.
